Whether you call them peppers or capsicums, as a general rule, they are good for stuffing.
Today I was looking to use up some extra rice I had from making a curry the other night. I hate wasting food, but I also like the challenge of creating something new out of leftover ingredients.
There are endless variations on stuffed peppers. I chose to make a vegetarian option – using meaty baby portabella mushrooms, pesto and almonds. If you have precooked rice on hand, these won’t take long to make at all. Quiona or couscous would work well instead of the rice, and cannellini beans would be a really nice addition.
Vegetarian Stuffed Red Peppers (serves 2)
- Olive Oil
- 1 large red pepper, de-seeded and cut in half
- 1/4 cup almonds, chopped and toasted
- 1 clove garlic, chopped
- 1 small onion, diced
- 5 baby portabella mushrooms, diced
- 2 tablespoons of pre-made pesto
- 1 teaspoon of thyme
- 1 cup cooked rice
- 1/4 cup parmesan, plus extra for topping
Begin by setting your grill/broiler to a high heat. Place your pepper halves on an oiled baking sheet and into the oven – grilling 5 minutes on each side. Take out and set aside.
If your almonds aren’t already toasted, you can do that now. Put them in a dry pan over a medium-high heat, tossing frequently until golden and fragrant.
Preheat oven to 200 C/400 F
In a medium pan, heat oil and saute garlic on a medium heat for 1 minute, add onion and cook for 3 more minutes. Add diced mushrooms, thyme and pesto and season with salt&pepper. Cook for 3-4 minutes until the mushrooms are tender. Add a little water if the pan is getting dry.
Add the cooked rice and parmesan to the pan and stir to combine. Take off heat.
Spoon rice mixture into pepper halves and sprinkle with extra parmesan. Bake in the oven for about 10 minutes.
